Ingredients
- 1.5 pounds chicken breast
- 2 medium/large zucchini, quartered
- 1 medium/large yellow squash, quartered
- 12 ounces cherry tomatoes
- 2.5 pounds Yukon gold potatoes, cubed
- 1-2 TBS olive oil
- 2 TBS Italian dressing
- 1 TBS parsley
- Salt & Pepper to taste
Steps
- Preheat oven to 400 degrees. Line baking sheet with aluminum foil.
- Halve or dice potatoes and add to half of the baking sheet. Drizzle in olive oil and top with parsley. Cook for 20-25 minutes. Remove.
- On empty half of baking sheet line zucchini, squash, tomatoes, and chicken breast. Salt & pepper to taste. Drizzle in Italian dressing. Bake for 18-25 minutes or until chicken is cooked through and vegetables are tender.
