Ingredients

  • 1.5 pounds chicken breast
  • 2 medium/large zucchini, quartered
  • 1 medium/large yellow squash, quartered
  • 12 ounces cherry tomatoes
  • 2.5 pounds Yukon gold potatoes, cubed
  • 1-2 TBS olive oil
  • 2 TBS Italian dressing
  • 1 TBS parsley
  • Salt & Pepper to taste

Steps

  1. Preheat oven to 400 degrees. Line baking sheet with aluminum foil.
  2. Halve or dice potatoes and add to half of the baking sheet. Drizzle in olive oil and top with parsley. Cook for 20-25 minutes. Remove.
  3. On empty half of baking sheet line zucchini, squash, tomatoes, and chicken breast. Salt & pepper to taste. Drizzle in Italian dressing. Bake for 18-25 minutes or until chicken is cooked through and vegetables are tender.
