Ingredients

  • 3 pound chuck roast
  • 1.5 TBS olive oil
  • 1 medium yellow onion
  • 2.5 pounds Yukon gold potatoes, cubed
  • 1 pound carrots
  • 5 garlic cloves, minced
  • 1 1/4 cups beef broth
  • 1 TBS minced thyme
  • 1 TBS minced rosemary
  • Salt & Pepper to taste

Steps

Heat olive oil in large pan. Dab roast to dry and season with salt and pepper. Sear roast until browned on both sides (4-5 minutes per side).

Transfer roast to crockpot and add vegetables. Pour beef broth and add garlic and herbs.  Cook on low heat until roast and vegetables are tender, about 8-9 hours.

*Optional addition: Create gravy by adding broth and cornstarch to saucepan once roast is finished.
